Tomato Soup




This is THE. BEST. TOMATO. SOUP. EVER. The hint of basil and garlic are absolutely the best. You can make it sugar free if you wish, or use sugar if that's your thing. It is slightly foamy with the baking soda so if you want a smoother texture use the sugar. 

This is delicious by itself and also goes great with my secret ingredient grilled cheese sandwiches to make a full meal. 

Ingredients

1 6 oz can of tomato paste plus enough bone broth to equal 4 cups liquid
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp basil
1 tsp salt
1/16 tsp stevia or 1 Tbsp sugar
½ teaspoon baking soda or omit if using sugar
1 cup cream
1 tablespoon butter

Directions

In a 4-cup measure put tomato paste and enough bone broth to equal 4 cups liquid. There's a fun trick to easily get the paste out of the can. Use the can opener to cut both ends of the can. Remove one of the metal ends and then face that side down into your bowl. Now push on the other metal end until it all falls into the bowl. This makes it so much easier to get all the tomato paste out! Just don't forget to get the metal end out of the bowl.

In a large heavy saucepan, heat tomato mixture and spices until boiling. Remove from the heat and add remaining ingredients. If the stevia doesn't mix in well then use a stick blender to blend it in. Return to heat and cook on medium heat until butter is melted and the soup is heated through.
