Gluten Free Chocolate Chip Pumpkin Muffins

Ingredients
2 cups simple gluten free flour or all purpose flour
1/2 tsp ginger
1 tsp allspice
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 tsp baking soda
2 eggs
1/3 cup honey
1 cup pumpkin 
1/4 cup butter
1/2 cup sour cream
1 cup chocolate chips

Directions
1. Preheat the oven to 350°F. In a large bowl thoroughly mix the first six ingredients. 
2. In a separate bowl combine the baking soda, eggs, honey, pumpkin and melted butter; whisk until blended. 
3. Pour over the dry ingredients and fold in with a spatula until the dry ingredients are moistened. 
4. Fold in the sour cream and then stir in the chocolate chips. 
5. Spoon the batter into greased muffin cups. 
6. Bake for 30-33 minutes or until puffed and springy to the touch. Turn out onto a rack to cool. Serve with soup or as a breakfast. (Makes about 12 muffins)
