Tequila Lime Grilled Chicken Tacos
Marinade Ingredients
6 boneless, skinless chicken thighs (about 1 1/2 lbs)
2 Tbsp Lime juice
2 Tbsp Tequila
4 Tbsp avocado oil
1 tsp cumin
1 tsp cumin
1 tsp chili powder
2 cloves garlic, crushed
1 tsp salt
1/2 cup cilantro
Optional toppings
Avocado, chopped
Tortillas
Lime slices
Olives
Lettuce
Salsa
Sour Cream
Cheese
Tortilla chips
Directions
1. Put all marinade ingredients except chicken into a small bowl and blend thoroughly with a stick blender.
Place the chicken and blended marinade ingredients in a bowl and stir well. Cover and place in fridge for at least 30 minutes and up to 4 hours.
2. Preheat the grill on high heat. Place the chicken on the grill and turn heat to medium low. After about 3 minutes or when the internal temperature reaches 110°F, flip the chicken. After 3-4 minutes check the internal temperature and if more cooking is needed, flip again. I use this digital thermometer. Check the chicken every couple minutes until internal temperature is at 165°F.
3. Slice the chicken and serve in tacos.
