Saucy Cashew Chicken Sheet Pan Dinner


Marinade Ingredients
2 lbs chicken thighs, cut into 1" chunks
2 tbsp soy
2 tbsp oil
2 cloves garlic

Other Ingredients
1 bell pepper, chopped
1 head of broccoli, chopped
1 Tbsp avocado oil
1/2 cup cashews, roasted

Sauce Ingredients
2 Tbsp sesame oil
2 splashes hot sauce
1/3 cup honey
3 Tbsp vinegar
1/2 cup ketchup
6 garlic cloves
1/2 cup soy sauce
4 Tbsp sugar
Reduce by about a third (2-3 min) no starch needed

Directions
1. Marinade the chicken for at least 30 minutes and up to 4 hours. Toss the vegetables with 1 Tbsp oil.
2. Preheat the oven to 400°F and grease a roasting pan.
3. Place chicken and veggies on roasting pan and roast for 15-20 minutes.
4. While the food is roasting, place sauce ingredients in a saucepan. Heat on medium heat and then simmer for about 5-10 minutes or until reduced by about a third.
5. Place chicken, veggies and cashews in a large serving bowl and pour sauce on top. Stir and serve immediately.
