Easy Gluten Free Pizza


Dough Ingredients
2 tsp instant yeast
1 ½ tsp sugar
1 cup warm water (105-115°F)
1 1/3 cup rice flour
1 cup tapioca starch
1 tsp xanthan gum (try 2 tsp next time)
1 tsp salt
2 Tbsp oil

Pizza Ingredients
1 cup pizza sauce
6 oz pepperoni slices
2 cups shredded mozzarella cheese
4 oz sliced mushrooms, optional

Directions
1. Preheat the oven to 400°F.
2. Put water, yeast and sugar in a mixing bowl and let sit for 5-10 minutes until yeast starts to bubble. 
3. Mix all the rest of the ingredients with a dough mixer for about 1 min in electric mixer. 
4. Place on parchment paper and roll out with a greased rolling pin (do not use flour!). 
5. Place on a greased pizza pan and oil the top. Add toppings and bake for 13-15 minutes or until top is golden brown. 

Serves: 4-6     Prep time: 15 min     Cook time: 13-15 min Total time: 25 min
