Summery Sautéed Veggies


Use this recipe for the perfect texture for your zucchini, slightly caramelized onions and sautéed mushrooms. This blend is perfect on eggs, in quiche, on your burger, or as a side for almost any main dish.

Ingredients
1 medium zucchini, quartered and sliced into 1/2" chunks
1 onion, sliced
8 oz mushrooms, sliced
1-2 Tbsp oil

Directions
Preheat a cast iron pan with 1-2 Tbsp of oil in it over high heat. I like to use this 10.25" pan from Lodge.
Put the onions in the pan and sauté on medium high for 3-4 minutes. Add the mushrooms and cook for 3 minutes longer. Finally, add the zucchini and cook, stirring constantly for 3 more minutes. Serve immediately.
