Peppery Coleslaw
This coleslaw is The.Best.Coleslaw.Ever. Occasionally I take a shortcut and buy a premade coleslaw sauce and just add pepper to it, but honestly the flavor of this is worth the 30 extra minutes of prep. It is so good.
Ingredients
2 16 oz bags of precut coleslaw mix or 1/2 cabbage, sliced with 1 carrot, shredded
1 cup mayo
1/4 cup apple cider vinegar
2 Tbsp dijon mustard
1 1/2 tsp pepper
1/2 tsp onion powder
1/4 cup sugar or honey
1 tsp salt
Directions
If using fresh cabbage, place the cabbage and carrot in a bowl and toss with 1-2 tsp salt. Let sit for at least 30 min and up to 4 hours in the fridge. The salt will draw out some of the excess moisture from the cabbage.
In a small bowl mix together the mayo, vinegar, mustard, pepper, and sugar (include the salt in this if you're using the precut coleslaw mix).
Once the salt has drawn out the water, strain the cabbage and carrot mixture. In a large bowl stir together the cabbage, carrot and dressing. Refrigerate for at least 30 minutes and up to 24 hours before serving so the flavors can meld. Enjoy!
