Basic Fish Tacos
Marinade Ingredients
2 lbs Tilapia or other white fish, boneless and skinless
2 Tbsp lime juice
2 Tbsp oil
1 tsp salt
2 tsp chili powder
1/2 tsp oregano
1/2 tsp cumin
1/4 tsp salt
Fish Taco Sauce Ingredients
1/2 cup mayo
1/2 cup sour cream
1/2 tsp chili powder
1/4 tsp cumin
1/4 tsp oregano
1/4 tsp salt
1 Tbsp lime juice
1-3 Tbsp water, for thinning
Toppings
Cabbage, finely shredded
Corn tortillas or flour tortillas
Directions
1. At least 30 minutes before the meal and up to 4 hours before, place the fish and marinade ingredients into a ziploc bag and put in the fridge until ready to cook. Stir together the fish sauce ingredients and put in an airtight container in the fridge until ready to serve.
2. Mix together the spice mix in a bowl and set aside
3. About 10 minutes before serving, set the broiler to low or 350°F. Cover a sheet pan with aluminum foil and spray with oil spray. Sprinkle both sides of the fish with the spice mix and place on the prepared pan. Cook under the broiler for 6-8 minutes until fully cooked and easily flakes with a fork.
4. While the fish is cooking, preheat a cast iron pan with 1 Tbsp oil over high heat and then heat each corn tortilla for about 12 seconds per side. Place the warmed tortillas in a towel to serve.
5. Break the fish apart into small chunks and serve immediately.
6. Assemble tacos by putting fish in a tortilla and placing beans, cabbage and plenty of sauce on top. Enjoy!
