BLT Dressing

This dressing is knock-your-socks-off good. I'm sure it has a lot to do with the bacon infused oil. Now, I can already hear the critics and questioners, so I will start with the explanation. It is necessary to infuse the oil with bacon, rather than just using bacon grease, so that your dressing will not solidify in the fridge. Also, this oil is so delicious you might just start using it for everything since it's slightly healthier than putting bacon grease in everything. 


Ingredients

2 Tbsp bacon infused oil (1 Tbsp bacon bits and 2 Tbsp oil of choice)
1/4 cup mayo
1 tsp parsley
1 garlic clove
2 Tbsp water
1/8 tsp salt or to taste

Directions

Start the oil infusion 24 hours before making the dressing. Mix together the bacon bits and 1/4 cup oil and stir well. Let the flavors meld for 24 hours and it's ready to use! 
A few hours before the meal, put your mayo in a jar and add 1 Tbsp of bacon infused oil. Slowly stir together until combined. Add the rest of the oil 1 Tbsp at a time and stir after each one thoroughly so that you don't mess up the mayo immersion. Add the parsley and garlic and stir. If you want a thinner consistency add the water, 1 Tbsp at a time and stir well. Enjoy! Makes a little bit more than 1/4 cup of dressing.
