Black Bean Soup
Ingredients:
4 cups black beans, undrained
1 jalepeno
2 cups broth
2 cloves of garlic
1/2 cup salsa or 1 can green chilies
1 tbsp chili powder
1 tsp cumin
pinch of cayenne
shredded cheese (optional)
sour cream (optional)
chopped onion (optional)
fresh chopped cilantro (optional)
Directions
Blend 2 cups of black beans in a blender with 1 cup broth until smooth. Saute jalepeno in lard or oil. Pour all 4 cups of beans into medium saucepan. Add broth, garlic, salsa (or green chilies), chili powder, cumin, and cayenne. Bring to a boil. Turn the heat down and simmer for 10 minutes. If desired top with shredded cheese, sour cream, onion, and cilantro. Makes four servings black bean soup.
