Split Pea Soup
2-4 lb ham with bone
1 large onion, chopped
2 carrots, peeled and chopped
3 cups green split peas, rinsed
6 cups broth
3 clove garlic, peeled and minced
1 bay leaf
Salt and pepper to taste
Parsley for garnish
Directions
1. In a large pot, heat oil. Sauté onion for 3 minutes until transparent.
2. Add carrots, split peas and broth. Stir to mix.
3. Add garlic, bay leaf, salt and pepper. Stir to mix.
4. Bring to a boil and then turn down to a simmer. Simmer for 45 minutes.
5. Take ham bone out and chop up ham into bite sized pieces. Put the ham pieces back into the soup and simmer for an additional 15-20 minutes or until the peas have disintegrated.
6. Serve in bowls and sprinkle with parsley and parmesan cheese.
